with Basil Pesto, Tomatoes & Parm

A verdant duo of snap peas and green beans gets cooked with juicy tomatoes then finished with our herbaceous basil pesto and a sprinkle of parmesan.

Ingredients

Green Beans
8 oz
Sugar Snap Peas
4 oz
Grape Tomatoes
3 tbsp
Basil Pesto
¼ cup
Grated Parmesan Cheese
Note: Measurements are for 2 serving recipes.
Instructions

Prepare the green beans & snap peas
Wash and dry the fresh produce. Cut off and discard any stem ends from the green beans. Pull off and discard the tough string that runs the length of each snap pea.

Cook the vegetables & serve your dish
In a large nonstick pan, heat a drizzle of olive oil on medium-high until hot. Add the green beans, snap peas, and tomatoes; season with salt and pepper. Cook, stirring occasionally, 3 to 5 minutes, or until lightly browned and slightly softened. Add 2 tablespoons of water (carefully, as the liquid may splatter). Cook, stirring occasionally and gently pressing on the tomatoes, 3 to 4 minutes, or until the vegetables are softened. Turn off the heat. Stir in the basil pesto until combined. Serve the sautéed vegetables garnished with the parmesan. Enjoy!
