
Lemon-Caesar Roasted Broccoli
with Sweet Peppers & Almonds

Hearty roasted vegetables are tossed with a mix of creamy caesar dressing and fresh lemon juice, then topped with sliced almonds for delicious crunch.

Broccoli
2 ½ tbsp
Creamy Caesar Dressing

Lemon
8 oz
Sweet Peppers
2 tbsp
Sliced Roasted Almonds
2 tbsp
Mayonnaise

Instructions

Prepare & roast the vegetables
Preheat the oven to 450°F. Wash and dry the fresh produce. Cut off and discard the bottom 1/2 inch of the broccoli stem; cut into small florets. Cut off and discard the stem of the peppers; remove the cores, then halve lengthwise. Quarter and deseed the lemon. Line a sheet pan with foil. Transfer the vegetables to the sheet pan. Drizzle with olive oil and season with salt and pepper; toss to coat and arrange in an even layer. Roast 24 to 26 minutes, or until browned and tender when pierced with a fork. Remove from the oven.

Dress the vegetables & serve your dish
Meanwhile, in a bowl, combine the caesar dressing, mayonnaise, and the juice of as many lemon wedges as you'd like. Transfer the roasted vegetables to the bowl of dressing and toss to combine. Serve the dressed broccoli and peppers garnished with the almonds. Enjoy!
