Ingredients

Shrimp (peeled & deveined)

Baby Spinach
4 oz
Grape Tomatoes
6 tbsp
Roasted Bell Pepper Pesto
1 ½ oz
Feta Cheese
4 oz
Orzo Pasta
1 each
Single-Use Aluminum Tray
Note: Measurements are for 2 serving recipes.

Instructions

step 1
Start the tray
Preheat the oven to 450°F. Wash and dry the fresh produce. Lightly coat the bottom of the tray(s) with a drizzle of olive oil. Add the spinach, pasta, and tomatoes. Add 2/3 cup of water to the tray (or to each tray for 4 servings). Season with salt and pepper; stir to thoroughly combine. Tightly cover with foil and bake 20 minutes. Leaving the oven on, remove from the oven. Carefully remove the foil.

Finish & serve your dish
Pat the shrimp dry with paper towels; season with salt and pepper. Add the red pepper pesto to the partially baked tray(s). Stir to combine, gently pressing down on the tomatoes with the back of a spoon to burst. Add the seasoned shrimp in an even layer. Top with the feta (crumbling before adding). Return to the oven and bake 9 to 10 minutes, or until the shrimp are opaque and cooked through. Remove from the oven. Stir to combine. Let stand at least 2 minutes before serving. Enjoy!
